Deer Tenderloin Recipe

Place one or more tenderloins in a glass pan.
Add 4-6 ozs. of Ceaser dressing to almost cover.
Add 1 table spoon of Wichester sauce.
Add 1 teaspoon of hot sauce.

Let it marinate for at least 2 hours turning every hour to equalize the marinade coverage.
Set the broiler to high, place the tenderloin on the broiler pan, taking care to tuck any thin parts under the bulk of the loin, lightly salt, place on the second rack position.   Cook about 3 minutes on each side depending on the thickness of the loin.  Deer is very lean so if it is over cooked it will not be good.  You may also want to brush it with olive oil when you turn it.  Don't over cook it.  If it is a small loin you may not even cook it that long.  Serve with baked sweet potatoes and collard greens.
